Nut Crusted Chicken

We used to enjoy dining at a restaurant near the Ohio River called "Coach and Four." They had a chicken dish made with pecans and topped in a creamy mustard sauce. Our taste buds got to reminiscing and we decided to try to recreate the flavorful fowl from memory. Our tummies were pleased with the result we achieved in this very simple dish that can be ready to serve in about 30 minutes. We hope this will become one of your new favorite recipes to share w/family & friends!.

Serves 4

INGREDIENTS

  • 1 cup Nuts---preferably Pecans or Walnuts, finely chopped (see step 1)
  • 2 tablespoons cornstarch
  • 2 teaspoons Pure Paleo™ Gourmet Seasoning
  • 1 1/2 teaspoons Pink Hawaiian Gourmet Salt
  • 1 egg
  • 2 tablespoons water
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons cooking oil
  • 4 tablespoons butter
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon white-wine vinegar
  • 1/2 tablespoon The Original™ Gourmet Seasoning
  • 2 tablespoons fresh parsley, chopped

    DIRECTIONS

    Step 1    

    In your food processor, pulse walnuts with cornstarch, Pure Paleo™ seasoning and 1-1/4 teaspoons salt until the nuts are well chopped but still hold their shape. Transfer the mixture to a medium bowl.

    Step 2    

    In a small bowl, whisk together egg and water. Set aside.

    Step 3
    Remove chicken breasts from packaging, rinse and pat dry. Pound the chicken breasts to thin them. This helps reduce cooking time and will also help you avoid burning the nut coating.
    Step 4
    In a large cast iron skillet, heat the butter and oil over moderate heat.
    Step 5    
    Dip each chicken breast into the egg mixture and then press into the nut mixture, coating evenly.

    Step 6
    Place the chicken in the pan and cook for 5 minutes. Turn and continue cooking another 5-7 minutes or until the chicken is golden brown and cooked throughly. If in doubt, use a meat thermometer. Temperature should be 160º. 
    Step 7    

    While the chicken cooks, prepare the sauce. Combine mayonnaise, mustard, vinegar, parsley and 'The Original™' Gourmet Seasoning in a small bowl. Stir well to fully incorporate all ingredients.

    Serve the chicken with the mustard sauce along with a fresh salad or your favorite sides and vegetables for a complete meal.

    NOTE:

    This chicken recipe could be served as a tasty appetizer too. Simply cut the chicken breasts into strips approximately 1 1/2" thick before coating.
