We used to enjoy dining at a restaurant near the Ohio River called "Coach and Four." They had a chicken dish made with pecans and topped in a creamy mustard sauce. Our taste buds got to reminiscing and we decided to try to recreate the flavorful fowl from memory. Our tummies were pleased with the result we achieved in this very simple dish that can be ready to serve in about 30 minutes. We hope this will become one of your new favorite recipes to share w/family & friends!.
Serves 4
In your food processor, pulse walnuts with cornstarch, Pure Paleo™ seasoning and 1-1/4 teaspoons salt until the nuts are well chopped but still hold their shape. Transfer the mixture to a medium bowl.
In a small bowl, whisk together egg and water. Set aside.
Step 3While the chicken cooks, prepare the sauce. Combine mayonnaise, mustard, vinegar, parsley and 'The Original™' Gourmet Seasoning in a small bowl. Stir well to fully incorporate all ingredients.
Serve the chicken with the mustard sauce along with a fresh salad or your favorite sides and vegetables for a complete meal.

This chicken recipe could be served as a tasty appetizer too. Simply cut the chicken breasts into strips approximately 1 1/2" thick before coating.
